Companies/Contacts List - Customizable Table Headers

## What / Why
There is a lot of information hidden behind the edit modal when viewing your companies and contacts list. It would be nice to have the ability to choose which columns are in the table view. This way with larger filled categories it is a bit easier to scan without needing to open each record.

## Proposal
- Add a "cog" icon to the far right of the table header
- Clicking the "cog" icon will open a modal with selectable table headers
- Selecting the table headers will update the table, each table header should be able to be sorted on
Note: For tables with many columns we can utilize an inner horizontal scroll to make the data still readable/viewable
